Very Berry Blueberry Muffins 28Jun09

I’ve been craving some blueberry muffins lately but I’ve been sick so I haven’t had the chance to cook or bake much the past week. Now that I’m about 99.9% better, I had to make some blueberry muffins right away! These muffins are very very very berry. I figured blueberries are jam packed with vitamins they’ve gotta be good for me. You could cut down the amount of blueberries if you want more cake.
Depending on how you like your muffins, you can add about another minute to the baking if you like it a bit more brown. I like to take it out a little before then so the insides is still incredibly moist. Test it out, see what you like! Enjoy!
Ingredients:
1 3/4 cup of all purpose flour
2 teaspoons of baking powder
1 1/2 teaspoon of salt
3/4 cup of sugar
6 tablespoons of melted butter, room temperature
1/2 cup of buttermilk
2 large eggs
1 tablespoon of vanilla extract
2 cups of fresh or frozen blueberriesPreheat oven to 400°F or 205°C.
Step 1: Mixing!
You’ll need 2 mixing bowls. First one, whisk together the flour, baking powder, and salt. Now set that aside for later. In the other mixing bowl, whisk together the sugar, buttermilk, eggs, and vanilla until well combined. Now slowly add in the melted butter (make sure it’s room temp!) and whisk away until it’s all combined. Now add the flour mixture and whisk together for about a second… okay well maybe like 3 seconds. Do no over mix! Just enough to get the dry ingredients folded in the sugar and butter mixture. Add in the berries and fold together.Step 2: Baking!
Butter your muffin trays and have them handy. Fill with the mixture to the top and pop them in the oven for about 20-25 minutes. Check to see if they’re ready by poking a toothpick in the middle and it comes out clean. Let them cook in the trays for 10 minutes and then shake them off into a cooling rack and let them cool completely.
They’re delicious warm but will also be good stored in an air tight container for up to 2 days. Serve with a glass of milk, toasted with some butter, cuppa tea, milkshake? I am pretty sure anything goes with this delicious snack. I think blueberry muffins are often breakfast for most people so enjoy your breakfast, lunch, snack, dinner, whatever!

I always add cream cheese or sour cream to my muffins to add a creaminess….BUT this looks incredible.
